#Ad Grilled Cheese Corn Dogs

My mind is squarely divided between the class I had before and the class I’ll have coming, and lunch is typically the last thing on my mind. When the opportunity arises to linger around lunchtime and take my sweet time making sandwiches, I tend to go beyond scrambled eggs with a side of anxiety. Corn dogs to the rescue. This recipe was so tasty that The Bedfellow stayed home from work so she could eat it again.DSC_7031They’re very easy- similar to the sliders, but more cheese-based, using Tyson’s County Ribbon corn dogs from Sam’s Club. Think of them as a grilled cheese sandwich with the bread replaced with corn dogs. To counter some of the richer flavors, we added sliced cocktail onions, caraway seeds, Dijon mustard, and pickles- it tasted like rye bread. wpid-IMAG1078.jpgThe cheese was Boar’s Head 3 Pepper Colby Jack, and it added a decent heat to the richer flavors of the meat.
