You’re sort of here! I mean, when you’re not raining or inexplicably freezing cold. I helped the Bedfellow move last weekend and to celebrate her newfound independent freedom and private refrigerator, we made these delicious pink lemonade tacos with a pear and mint slaw, using Tyson Grillin’ Wings for an easy to make dinner that took a mere 30 minutes from start to finish- grilling included!DSC_8739

Using the smokehouse-flavored wings and a dash of Country Time Lemonade from Sam’s Club, I marinated the wings in a mixture of harissa hot sauce, buttermilk, garlic, and lemonade mix (the result was pink, hence pink lemonade wings) for three days, then brought them to the apartment and cooked them up. It was too rainy to grill, so we made do with a pan on the stove. The wings are ready and on the table in twelve minutes- pretty easy, no?DSC_8738While I cooked and shredded the chicken, the Bedfellow made the slaw, using a simple organic pre-chopped broccoli and carrot slaw and an Asian pear, mixed with lemon juice, honey, freshly julienned mint, diced onion, and mayonnaise. Atop warm corn tortillas, it was a delicious, spicy treat, citrusy and sweet from the lemon and lemonade. And it only took a few ingredients! #CollectiveBias definitely picked a winner here- this is a recipe we’re going to keep on our roster for quite some time. DSC_8736The wings were tender and soaked up the flavors of the harissa and lemonade quite nicely, and the smokehouse flavoring lent a rich, smoky flavor to the pieces.
