Looking for snack recipes for all of your basketball-watching? Look no further, I have a few recipes that I’ve concocted for the games.This year, both of my alma maters have made it into the NCAA tournament- UMass Amherst and UConn. Go Minuteman Husky! God, that’s a terrifying beast. I’ll be cheering for them both, albeit warily as, like all sports, I have no idea what’s going on. Still, I’ve come up for some snacks for the game for all to enjoy.
Triple ‘B’ Dip (Brie, Bacon, and Barbecue)
Ingredients (makes 4 ramekins)
4 tablespoons of spicy barbecue sauce
8 tablespoons of sour cream
8 tablespoons of cream cheese
4 slices of bacon 1/2 lb. wedge of brie or camembert cheese
Cayenne pepper1. Preheat the oven to 350 and prepare a large, deep sheet pan with about an inch of water to create a water bath. Start frying the bacon, and mix the sour cream, barbecue sauce, and cream cheese in a bowl until combined.
2. Layer the barbecue sauce, crumbled pieces of bacon, and slices of brie on top. Place the ramekins in the water bath and top with cayenne pepper.3. Bake for 15-25 minutes or until the brie is melted and gooey. Serve with crackers or cheese ‘basketballs’ for dipping.Brown Butter Brownies
Ingredients (makes 24 brownies)
1 pre-packaged mix or batch of your favorite brownie recipe
1/2 stick of butter
1 tablespoon of creamy peanut butter
1 candy bar of your choice- I used deLISH salted toffee and milk chocolate
Assorted nuts for decoration1. Preheat the oven to 350. Melt a stick of butter in a pan and brown it, stirring carefully until it is dark and fragrant. Mix in the peanut butter and the brownie mix or batter.
2. Roughly chop the candy bar and mix it into the brownie mix. Pour the batter into a pan and decorate with the nuts. You can make all kinds of designs- I made flowers!
